Red cabbage and walnut pasta

Here's another put-together: three ingredients that taste much more fabulous together than you might think.



Serves 2.

Ingredients:
A quarter of a red cabbage, sliced finely
Half a pack of walnuts, chopped roughly into halves
Enough pasta for two

Cook your pasta as per usual. Meanwhile, dry fry the walnuts in a pan. Once done, remove and put on a plate to cool. Add some olive oil to the empty pan (be careful it will be HOT!) and fry your cabbage for a few minutes. If you like garlic, now is the time to add some. Turn down to a low heat and put the lid on to let it steam for a few minutes. Drain the pasta once it's ready, then add to the cabbage pan with the walnuts, lots of black pepper and an extra glug of olive oil. Give the pasta a good mix in the pan so that it picks up all the lovely nutty oil and then pop on to plates.
