Cinnamon Toast


An easy recipe which is perfect for a lazy Sunday brunch to kick off the new year. Sarah and I once tried the most delicious Cinnamon toast in a Scottish cafe and have since tried many a time to recreate it with no luck. I had a real craving for it this morning and stumbled across a recipe that was just perfect - and takes all of 2 minutes to put together.

Take 4 slices of bread (white is best) and toast one side under the grill. While the bread is toasting, mix together 50g soft butter or margarine, 1.5 tablespoons demerara sugar and 1.5 tablespoons ground cinnamon. Spread the cinnamon mixture over the un-toasted side of the bread, then pop back under the grill until browned and bubbling. Delicious with a cup of tea.
