Bonfire Tart

This comes a little after bonfire night, but, all the same, it is a really flavoursome dish.
I do love a tart too (as you can probably tell from my other tart recipes on here)!
Ingredients:
2 red onions, sliced into wedges and roughly flaked apart
1 punnet of cherry tomatoes, whole
2 cloves of garlic, peeled and quartered
1 pack of mozzarella cherries
1 pack of ready roll puff pastry
1 pack of Waitrose British pork & paprika sausages, thickly sliced into rounds
1/2 pack of bacon lardons (optional)  
Preheat your oven to gas 6 (180°C).
Pop the flaked onions on a baking tray and add the garlic and cherry tomatoes. Season and sprinkle on mixed herbs and a drizzle of olive oil. Cook these for 35-40 minutes, stirring half way through. Meanwhile, put a large pan on the heat and spray in some 1 calorie oil, add the sausages and lardons and cook for 15 minutes or so (until crispy!). When the sausages are done unroll the puff pastry onto a baking tray, score a 1cm border and prick the base with a fork. Place in the oven and cook for 25 minutes (it'll puff up a bit but that's fine). Ideally the sausages, vegetables and pastry will all be ready at the same time. Add the vegetable mix and sausages to the top of the pastry and dot on the mozzarella balls. Cook for a remaining 20-25 minutes until bubbling and golden.
