Pork, bacon, cider and leek hotpot

This is good comfort food and quick compared to other stews as it only takes 30 minutes to cook. It's almost halfway between a soup and a stew as it has lots of sauce. Plus you cook it in one pot so the washing up is minimal! The pork becomes meltingly tender and the apple and cider give it a lovely hint of sweetness.



Ingredients:
1 pack of pork steaks - 2 large ones is enough
A few slices of smoked bacon, or a small pack of bacon lardons
1 leek, thickly sliced
1 onion, sliced
6-10 small salad potatoes, quartered
4 tbsp plain flour
250ml cider
1 apple, cored and diced
500ml chicken stock
1 tsp wholegrain mustard [optional]

Serves 4

Halve the pork steaks and heat some oil in a large pan. Add the pork along with the bacon and fry for 4 minutes or until the bacon looks cooked. Now add the onion and leek and cook for 5 minutes, until the vegetables are soft. Turn down the heat, stir in the flour, cook for 1 minute, then pour in the stock and cider. Give the pan a good stir to get any flour off the bottom of the pan, turn up the heat and bring to a gentle simmer, then throw in the potatoes and apple. Leave to simmer for 30 minutes, with the lid off to let the sauce reduce a bit. Season with pepper, stir in the mustard and serve in bowls with bread to mop up the delicious sauce.
