Coconut pancakes

I first tried these in America and they were a revelation - why they're not on menus here is a mystery! A good one to impress friends with for brunch. You don't even need scales - which keeps things nice and simple if you're a bit bleary eyed in the morning!





Makes 6-8 small pancakes [enough for 2].

In a bowl, whisk together 1 egg, 1 cup of flour, 1 cup of milk, a pinch of salt, a tsp of baking powder and 8 tbsp of desiccated coconut. Whisk until there are no lumps, and if it looks a bit runny, add a bit more flour [the aim is to get a batter that will create small, thick pancakes so you don't want it to spread out too much in the pan]. If you want to up your fruit intake, some blueberries would be an excellent addition at this point.

Leave the mixture for a few minutes before you start cooking - this will give the baking powder time to work it's magic.

Heat a small amount of butter in a frying pan and drop the mixture in. You should be able to fit about 3 pancakes in the pan at the same time. Turn them over as they start to bubble on the top. Once the first batch are ready, pop them in to a pre-heated oven to keep them warm.

Serve with lashings of maple syrup.
