Cheesy Quesadillas

These Mexican toasties are a quick and satisfying supper, oozing cheese and spicy tomato from between two crisp tortillas. You only need a handful of ingredients but could easily add any extras you like - chopped chorizo, mozzarella, chopped pepper…

























Per person:
2 tortillas
Handful grated cheddar
Few spoons tomato salsa or chopped tomatoes from a can
Chilli (optional)
1 spring onion

Lay one tortilla in a frying pan then spread with the tomatoes/salsa, and snip the spring onion and chilli (if using) on top.

Cover with the remaining tortilla and turn the heat on. Heat until the cheese is melted and the tortillas golden and toasted – you should turn over half way through.

Tasty served with sour cream and guacamole – or just as they are!
