Flatbread
Here is a super simple but very tasty recipe for flatbreads!
This does make quite a few, so halve the recipe if there are only two eating (unless you're very hungry!) and there will still be left-overs for lunch the next day!
Ingredients:
Flatbread:
500g self raising flour
3/4 - 1 tbsp sea salt
1 tbsp baking powder
500g natural yoghurt (low fat works too)
Butter (to brush on at the end):
150g butter
2 cloves of crushed garlic
1 tbsp of flat leaf parsley/coriander chopped (or dried mixed herbs...)
Mix together the flour and the yoghurt, add in the salt and the baking powder, and then kneed on a floured surface for a few minutes before placing the dough into a bowl (cover with cling film) for 15 minutes. Divide the dough into 12 and roll into plate-size rounds. Make 6 incisions in the centre of each, but leave 2 inches around the edge (so it doesn't fall apart!) Cook each of the breads on a hot, dry griddle for a couple of minutes per side until slightly puffy/browning. You may need to keep the breads in a warm oven whilst cooking the rest. Melt the butter and stir in the crushed garlic and herbs. Brush this onto the hot breads and EAT!
