Chicken, lentil and roasted tomato salad
This is a very quick and summery salad, with minimal prep. Perfect for the amazing weather we've been having lately - and for making your workmates jealous at lunch! The only thing you need to cook is the tomatoes - but it is roasting them that really makes this dish. They take on an amazing, sweet flavour just by popping them in the oven for 30 mins.
Serves 3-4
Put the tomatoes, whole, in to a roasting tin and drizzle with oil, salt and pepper. Roast for half an hour @ 180/gas 4.
Drain and rinse the can of lentils. Pile the lentils on to plates with the roast tomatoes, rocket and some cooked chicken [which you can cheat and buy from the supermarket ready-cooked if you're feeling lazy!].
Drizzle with a dressing made from a dash of balsamic vinegar mixed with olive oil.
