Super Quick Smoked Salmon Pasta

This is so simple it is less a recipe and more a quick trick when you are in need of a speedy supper or have someone to impress but don't want to spend all your time in the kitchen struggling with something complicated.

You can dress this up by using tagliatelle, with lemon slices and some fresh dill or fennel as a garnish. Or keep it simple and straightforward! Either way, the smoked salmon is delicious with the creme fraiche and if you buy a pack of trimmings from the supermarket it's not expensive.



Serves 3-4.

Ingredients:
1 pack of smoked salmon trimmings
Enough pasta for 3-4 people
3-4 tablespoons of creme fraiche
Lots of freshly ground black pepper
3 handfuls of frozen peas

Optional extras: lemon zest, lemon slices and chopped fresh dill or fennel

Cook your pasta as per the pack instructions. Drop the frozen peas into the same pan 5 minutes later. When the pasta is cooked, the peas should be ready too. Drain, leaving a little bit of the water in the pan.  This will help create the pasta sauce. You can take the pan off the heat now as the sauce and salmon need no cooking. Stir in the creme fraiche and grind lots of black pepper over the top. Break up the smoked salmon and mix in. Add in the lemon zest, if you are using it. Stir everything to combine and it's ready. Sprinkle over the chopped herbs if you like, and serve with a wedge of lemon on the side so that people can squeeze over the juices.
