Sweet potato, bacon and feta pasta


This might not look like the most appealing plate of food, but it does taste good. Nice and comforting, and a Retz classic. 



Serves 3-4.

Ingredients:
250g pasta (big tubes work best)
1 pack of bacon (smoky or not- your decision)
2 medium-large sweet potatoes, peeled and cut into cubes
1 pack of feta, cubed
Dried mixed herbs

Place the chopped sweet potatoes in a baking tray and mix with the herbs, oil and seasoning. Place in a preheated oven (medium heat: Gas 6-7) and put the timer on for 30 minutes. Meanwhile bring a large pan of salted water to the boil, and get a frying pan out for the bacon. Once the timer goes, gives the potatoes a stir, add the cubed feta to the baking tray, and put the pasta into the boiling water. Set the timer for another 10-15 minutes (depending on how you like your pasta). Heat up the pan for your bacon, and chop the bacon directly into the pan (using kitchen scissors is easiest). Cook until crispy. When the pasta is cooked, drain, but reserve a few tablespoons of the cooking water. Time to mix it all together! Remove the baking tray from the oven, add the pasta and cooking water and give it a good stir. Finally stir through the bacon, and you're ready to serve.
