Super Welsh Rarebit

Welsh rarebit is essentially a more special and more delicious version of cheese on toast - once you've tried it you'll find it hard to go back! I like to add some greens to the mix - as well as giving it a health boost, it also makes for a really nice bite and texture when mixed with the cheese. Serve this with some tomatoes drizzled with balsamic vinegar for a tasty and quick weeknight dinner. It's easy to throw together for one or two people.




Ingredients - for one:
2 slices of sourdough or regular bread
100g mature cheddar cheese, grated
1 tsp dijon mustard
1 egg
Large handful of spring greens or kale, chopped

Mix the cheese, mustard, egg and greens together in a bowl, while you toast one side of the bread under the grill. Once the bread is golden on one side, turn it over, spread the cheese mix over each slice, and then pop back under the grill. Leave until bubbling and melted. Enjoy!
