Crunchy summer super salad
This is the perfect salad to eat outside in the summer sunshine - crammed with zingy red and bright green colours, it has sparkling pomegranate seeds and greek feta adding to the delicious freshness.
You can add or remove ingredients as you please, and serve it with just about anything. It works equally well with vodka steak (recipe on its way) as it does with pizza...Enjoy!
The below quantities should be sufficient to feed an army (or 8 people) but it is just as tasty the next day.
Ingredients:
3 spring onions,
1 pomegranate,
100gr peas,
block of feta,
bag of radishes,
cucumber,
lime,
olive oil
Slice the spring onions diagonally, remove the seeds from the pomegranate, crumble the feta, and slice the radishes into thin circles.
Halve the cucumber lengthways and scoop out the seeds with a spoon, then slice so that you have smiley semi circle shaped pieces.
Mix in the peas, juice of half a lime and a good splosh of olive oil and hey presto, ready to devour!
