Tarty Times
Who doesn't like a tart? You can put pretty much anything on them and they act as a delicious meal-in-one, hot or cold, or for a picnic or fancy dinner party. We have a couple of favourites at our house: brie, courgette and tomato and feta, red onion and olives.
I made the latter tart yesterday with help from a friend and we had much fun both making it and also eating the ingredients along the way! From the picture you will see that there are some additional ingredients, however I am going to give you the recipe for the classic...
Ingredients:
3 large red onions, sliced
3 tbsp of soft brown sugar
6 tbsp of balsamic vinegar
1 can of olives, sliced (one of my favourite things to do)
1 block of feta cheese, chopped into cubes
1 block of puff pastry
Pre-heat the oven to 180ÂșC. Place chopped onions in a heated (oiled) frying pan and soften. Then add the sugar and balsam and mix away. Reduce heat and leave to cook for 15 minutes (or till sticky and looking caramelized!).
Meanwhile, roll out the puff pastry on a floured surface. Mark a 1 inch border around the edges with a knife, then prick the middle with a fork. Get a baking tray (length 32cm) and place the pastry carefully on it.
Once the onions are done, spread them over the pastry base and then sprinkle on the feta and olives and pop it into the oven. It will need roughly 15 minutes, then a turn around, then another 15 minutes. You may also have to move the baking shelf in the oven down to the bottom so that the tart will cook through properly under the filling.
