The Mighty Mushroom Burger

I am a massive fan of vegetarian food. Well, just meals that focus on the veg and less so on the meat. However, saying that, the first recipe is one that suspiciously tastes meaty although it isn't. The mighty mushroom burger. Now, this burger recipe does not use any old mushroom, oh no, it uses BIG mushrooms like Portobello. This is the mushroom, we as a family, tend to use. I think what really brings the meal together is a good marinade, garlic mayo and a big floury bap!



Now for the recipe. I don't think it's necessary to follow a recipe like a scientist. Do your own thing and be adventurous!


Ingredients:
4 x Portobello Mushrooms
4 x tbsp Olive Oil
Salt n Pepper
Mixed Herbs
2 x Garlic Cloves
4 x tbsp Mayonnaise
4 x Big Floury Baps

Optional:
Tomatoes
Rocket
Cheese (I like plain old cheddar but blue would be good too)

When I cooked this most recently, I went about it in a different way. I grilled instead of frying.
So put the grill on to preheat a little (perhaps put some foil under to catch any mushroom juice). Wash the mushrooms to get any grit off of them. Mix together the oil with the herbs and salt n pepper. Get one of those cooking brushes and paint the mushrooms with the oil. No need to use it all as it will be used later on... Now, leave these aside while you cut the baps (like you would for a sarnie!). Slice the tomatoes and cheese too, then everything is more or less ready to go. Scoop the mayonnaise into a little bowl and crush the garlic in with it. Give it a stir and bobs your uncle!

Pop the mushrooms under the grill and then put the timer on for 5 mins. After that brush any of the remaining oil on the rolls. Once the beeper goes, turn over the shrums and place one half of each of the rolls under the grill too. Time again for 5, although you will have to keep an eye on things here, as no one likes burnt bread. Switch over the bun halves too. When everything is looking nice a golden make sure the mushroom are bottoms up (the stalk in the air) and place the cheese slices on top and return to the grill till its bubbling!

Get some plates out and shove the bottom half of the bap onto a plate, then add some rocket and tomatoes. Place the mushroom (carefully) onto the bread, then slather the garlic mayo onto the top half of the bap and squidge onto the mushroom. Et voila! Mushroomy, burger yummyness!

  1. Sounds delicious! I'll try it out. But here's my question - do you take the gills off, or not? I have this vague idea you should, but it's so fiddly I'd rather not...

  2. Hey Kaleen, I didn't remove anything from the mushroom but I know some people are funny about the skin, so I say go ahead and do whatever makes you happy. Sure it will still be tasty!
