Spinach Pie

Sounds like a lot of ingredients but is really easy once you've done it a few times.

This has been a family favourite for many years; I cant remember where the recipe came from though.















Ingredients:
1 onion, finely chopped
1 tbsp olive oil
500g frozen spinach
1 x 500g block puff pastry
1 egg, beaten
2 slices bread made into breadcrumbs
200g mushrooms sliced (optional)
100-200g cheddar, grated (optional)
Seasoning

Pre-heat the oven to 180°C.

Cook the onion in the oil until translucent then add the mushrooms and cook for a few more minutes. Put the spinach in the pan and cook till softened; about 10-15 minutes. Add the cheese, breadcrumbs, seasoning and half of the egg (keep some for brushing the pastry later) then turn off the heat.

While the spinach is cooking divide the pastry into 1/3 which you roll out to fill the bottom of your baking tin. Pour the filling in, leaving 1" clear round the edge. Roll out the other 2/3 and place over the top of the spinach mixture.

Press the edges together then brush the reserved egg over the top. Put into the oven and cook for 30-40 min. /or until golden on top. One final point; it just has to be served with Tomato Ketchup and brown bread.
