Hoisin turkey in crisp lettuce

This is great for a party or when you have more guests than plates/cutlery - it's fresh and different, plus it's very tasty and quick to throw together.


Serves 6 as a nibble/starter or as part of a finger food feast.

1. In a bowl, mix 1 tbsp white wine or water, 1 tsp cornflour, 1 tbsp light soy sauce, 2 tbsp hoisin sauce, ½ tsp sugar and 5 tbsp chicken stock to a smooth liquid. Set aside.

2. Heat some oil in a large frying pan, toss in 1 large garlic clove, crushed and the white part of 3 spring onions, chopped. Stir fry for 2-3 minutes. Tip in 250g minced turkey and stir fry over a high heat until it colours, using the back of a spoon to break up any big lumps. Tip in a 220g can water chestnuts, drained and chopped and stir fry for a further 2 minutes.

3. Push the turkey mixture to one side of the pan. Pour the soy sauce mixture into the empty part and stir for 2 minutes until it bubbles and thickens. Combine thoroughly, then leave to simmer for 5-10 minutes. 

4. Take 2 Little Gem lettuces and break into separate leaves. Lay on a serving board and spoon in the warm mixture without overfilling, and scatter with the shredded green part of the spring onions.
