Pasta, grape, and watercress salad with a honey & mustard dressing

With Ally posting a few Retz classics recently, I thought the set wouldn't be complete without this pasta salad. Originally it included chicken, but, for some reason or another this was forgotten about, and I don't think it misses the meat at all.

As it is served cold, it works well as part of a picnic or for lunch at work.

There are no set measurements really, so feel free to vary it depending on your taste/how hungry you are!

Ingredients:

Pasta Salad:
(You can also just use your favourite pasta!)
Green Spinach Trotolle 50g
Wholemeal penne pasta 50g
Spirali pasta 50g
A bag of watercress, or, alternatively a bag of peppery baby leaf salad mix 70g
White and Purple grapes, halved, 50-70g

Dressing:
1 tbsp. wholegrain mustard
1.5 tsp. runny honey
50ml rapeseed oil

Cook the pasta according to the packet instructions, drain, and leave to cool. Add the halved grapes to a large bowl, and mix in the cooled pasta. Pour in the dressing and combine with the pasta/grape mix. Lastly tip in the leafy salad mix and give the salad one last stir.

  1. Yum! Sounds like a slightly dubious mix of ingredients but it is absolutely delicious!
