Beautiful Blondie
I have made these brownies quite a few times now as it only requires store cupboard ingredients and is super speedy. It's a Rachel Allen recipe and, although it makes a great blondie, I have tried a couple of different variations (I've included these below).
Ingredients:
1 egg
100g soft butter
150g peanut butter
175g light brown sugar
1 tspn vanilla essence
Mix all of the above ingredients together and then add the dry ingredients (see below)
1 tsp baking powder
125g plain flower
75g chopped white chocolate
Once combined add to a smallish greased baking tray (the bottom lined with greaseproof paper) and place in the oven at gas 3/150 C for about 35-40 minutes (if you have an electric oven rotate it at 10 minutes and check at 25 minutes). It's a good idea to check and rotate it half way through baking. It's quite tricky to know when it's done (because you want it a little gooey in the middle!) but you'll need to wait until its golden brown and almost firm in the middle.
The variations I have done include:
1. Replace the peanut butter with the smooth Speculos spread (if you haven't heard of this or tried it you should!)
2. Substitute 50g of the peanut butter for almond butter and add some nutmeg for a nice spicy/warm taste.
