Chocolate Banana Cake

I found this recipe on BBC Good Food when I searched for recipes using banana (as I had a couple of old ones to use) and it turned out to be rather tasty, so thought I would post it on here.

Ingredients

Cake:
100ml sunflower oil
175g caster sugar
175g self-raising flour
1/2 tsp bicarb of soda
4 tbsp cocoa powder (I use green & blacks)
100g chocolate chips
2 ripe bananas
3 medium eggs, 2 separated (you'll need to whisk the egg whites)
50ml milk

Topping:
100g milk chocolate
100ml sour cream
Banana chips
50g dark chocolate (for shards)

Preheat the oven to gas 3/160C (140C fan). 

Mash the bananas and then add the whole egg, two egg yolks, sunflower oil, and milk. Next mix in the caster sugar, flour, bicarb, cocoa and the chocolate chips. Lastly, gently mix the egg whites in. Add the mixture to a 2lb loaf tin OR an 8inch square baking dish (this was all I had and it worked well), greased and lined with baking parchment. Bake for about 1 hour 10 minutes. Be sure to check it half way through and rotate it. 

For the topping, pour the sour cream into a small saucepan and put on a low temperature. Then add the milk chocolate (break into squares) and stir until the chocolate has melted. Take off of the heat and leave to cool. To make the shards of dark chocolate, melt the chocolate in a bowl over simmering water and then pour onto an upturned (cold) baking tray and spread out with a spatula. You'll need to keep an eye on it as you need to scrape the chocolate off (to make shards or curls) when it has just set. Put these on a plate and place in the fridge until the cake is ready to be finished.  

When the cake is cooled pour over the chocolate/sour cream mix and then top with the shards of dark chocolate and the banana chips. Yum!
