Overnight Oats with Sweet Chestnut
There's nothing quite as satisfying as a good breakfast; here is a great one for weekdays.
This is delicious as a cooler alternative to porridge and keeps you full for a long time. I've added creme de marrons which is a delicious sweet chestnut paste from France - it tastes a lot better than it looks but you may need to go to a deli or larger supermarket to find it. If you prefer, you could use jam, compote, honey or fresh fruit to replace the creme de marrons.
(Serves 1)
Mix together 20g Porridge oats, 150g plain or greek yoghurt, 1 dessert spoon of creme de marrons (sweet chestnut puree) and 2 tbsp of orange juice or milk.

It's best to do this the night before you want to eat the bircher so that the oats can soften up overnight and make it extra creamy tasting - if not, 30 minutes in the morning should do it.
You may need to add more milk if it thickens up too much.
