Gratin Gratin

A little while ago the idea of making a Gratin just came to me! It is really easy to make and can be served alone or with a meat like chicken or pork.



Ingredients:

Vegetables of your choice... I used
2-3 Courgettes, sliced lengthways 
1 pack of Mushrooms, sliced
6 Tomatoes, sliced
(Aubergine, roasted butternut squash or peppers would also work well)

Cheese sauce... I made mine with Stilton, but you could try goats cheese or regular cheddar!
1/3 block of Stilton, crumbled
60g Butter
60g Flour
Milk
Salt n pepper

Topping:
Cheddar Cheese, grated 
Bread crumbs 

Preheat the oven to 180C. Start with the courgettes. Heat some oil and mixed dried herbs in a pan and then add in the courgettes and fry till they are softened and a slightly brown. You might need to do this in batches. Put the courgettes aside and do the same with the mushrooms. To make the cheese sauce, melt the butter in a pot and then add in the flour and stir till it makes a smooth paste. Now, gradually add in the milk and stir till it is all combined and smooth. Then add in the crumbled cheese and stir again. You might need to use a whisk. Get a large-ish sized dish and put in a layer of courgettes, then tomatoes and mushrooms. Pour on half of the cheese sauce and then repeat the vegetable layer again. Pour on the remaining sauce and then top with the breadcrumbs and cheese. Bake in the oven for 30 minutes, or until bubbling and golden.
