Green Grasshopper Pie


Although this sounds odd, the unusual green colour of the filling and contrasting dark crumb base attracted me to the pie. My friend Jenny and I decided to have a go and used a recipe from the Hummingbird Recipe book. 

Ingredients: 
250g Bourbon Biscuits or double chocolate cookies (bashed into crumbs)
175g Unsalted Butter (melted)
180g Marshmallows
200ml Milk 
1 tsp of green food colouring
1/4 tsp of peppermint essence
300 ml of Cream, whipped
Additional 200 ml of cream and also some chocolate

So... combine the crushed biscuits with the melted butter until quite firm (you may need to add a few more crushed biscuits) and add to a 23cm tart case.

Pat into the tin and up the edges too and place into the fridge for an hour or two. Pour the milk into a pan and put on a low heat. Add in the marshmallows and stir until melted, then add the colouring and essence. Leave to cool and little and then blob in the whipped cream.

Pour this mixture into the set crumb base and then pop back into the fridge for about an hour and a half. Whip up the remaining cream. When the pie is all set and looking lovely and green, spread the cream onto the pie and grate some chocolate on top for a final indulgent twist! Enjoy!
